Scientific Name: Hyperoglyphe antarctica.
Also known as: Deepsea Trevalla (Australia), Bonita, Blue Bream, Stoneye.
Characteristics: Flesh firm textured, medium coloured, whitens upon cooking. Moist and succulent. Suitable for all cooking types.
Description: The average length is 60 – 80 cm, weight ranging from 2 – 10 kg. Dark blue-grey or brownish-grey above, paler to silver on sides and belly; small scales.
Main Season: Generally available all year round.
