Characteristics: | Vibrant white flesh. Firm texture that does not easily flake. Suitable for most cooking methods. |
Description: | Unique to New Zealand but very similar to species found around Japan and Europe. Mottled olive brown above, white below. Average length is 30 – 50 cm weighting about 2 kg. |
Main Season: | All year round, but main catch during warmer months October to April. |
