Scientific Name: Haliotis iris
Also known as: Paua (New Zealand), Awabi (Japan), Oreja de Mar (Spain).
Characteristics: The New Zealand Paua (Haliotis iris) is unique to New Zealand. Wild caught Paua is strictly controlled under the New Zealand Quota Management System (QMS). Farmed Paua is only restricted by production capacity.
Description: Wild Paua minimum size is 12.5cm but average 14~18cm. Farmed Paua are usually minimum of 6cm ranging up to 11cm.
Main Season: Generally available all year round.
